PIZZA DOUGH iNGREDIENTS

  • 1/2 cup warm water

  • 1 1/2 teaspoons active dry yeast

  • 1 tablespoon wildflower honey

  • 1 1/2 cups flour

  • 1/4 teaspoon salt

CAJUN SHRIMP & TOPPING INGREDIENTS

  • 1 pound shrimp (peeled and deveined)

  • 2 tablespoons olive oil

  • 1 tablespoon cajun seasoning

  • 1 tablespoon creole seasoning

  • 1/2 tablespoon brown sugar

  • 1 in canned chipotle chile adobo + 1 tablespoon adobo sauce

  • 1/4 teaspoon salt and pepper

  • 8 ounces sharp white cheddar cheese (shredded)

  • 2 ounces goat cheese (crumbled)

  • chopped green onions (garnish)

  • fresh cilantro, chopped (garnish)

guacamole iNGREDIENTS

  • 3 large hass avocados (peeled, pitted and siced)

  • 1 jalapeno (seeded + diced)

  • 1/4 cup fresh cilantro (chopped)

  • 2 green onions (chopped)

  • 1 red pepper (chopped)

  • 2 whole sun-dried tomatoes (chopped)

  • 1 canned chipotle chile adobo + 1 tablespoon adobo sauce

  • 1/3 cup goat cheese (crumbled)

PIZZA DOUGH DIRECTIONS

1. In a large bowl, combine water, yeast and honey.

2. Mix with a spoon and allow to rest for 10 minutes.

3. Add in the 1 cup flour, salt and olive oil.

4. Stir until the dough comes together but is still sticky.

5. Using your hands, form the dough into a ball and work the additional 1/2 cup flour in to the dough, kneading it on a floured surface for a few minutes.

6. Coat the same bowl with olive oil. Place the dough inside, turning to coat. Cover with a towel and set aside to rise for about 1 1/2 hours.

7. When the dough is ready, start assembling the pizzas.

8. Preheat the oven to 375 degrees F.

GUACAMOLE DIRECTIONS

1. Cut, core and peel avocado into halves.

2. Place avocados in a medium size mixing bowl.

3. Squeeze lime juice over avocados and toss to coat.

4. Add in a pinch of cajun seasoning if desired.

5. Lightly mash the avocados in the bowl.

6. Fold in chopped jalapeno, cilantro, green onions, red pepper, sun-dried tomatoes, chipotle chile + adobo sauce and goat cheese.

7. Add salt and pepper (to taste).

CAJUN SHRIMP DIRECTIONS

1. Preheat a skillet over medium heat.

2. Combine the olive oil, cajun seasoning, creole seasoning, brown sugar, chipotle chile + adobo sauce in a bowl.

3. Toss shrimp in the bowl mixtures to evenly coat.

4. Add the shrimp to preheated skillet in a single layer and sear for 3-4 minutes, flip and sear another 3 minutes. (Do not overcook as the shrimp will continue cooking in the oven.)

ASSEMBLY & BAKING DIRECTIONS

1. Roll the pizza dough into one 12-inch flattened disk or several smaller personal pizzas.

2. Place the pizzas on a greased baking sheet.

3. Spread the pizzas with a layer of guacamole. (do not use all the guacamole, save some for topping)

4. Spread goat cheese over the guacamole.

5. Add the shrimp and another sprinkle of cheese.

6. Bake the pizza for 25-30 minutes or until the cheese is all melty and gooey.

7. Remove and top with goat cheese, dollops of the remaining guacamole, green onions and cilantro.
