iNGREDIENTS
• 1 ½ pounds mini potatoes
SWEET FILL iNGREDIENTS
2 ounces soft goat cheese chevre, room temperature
3 tablespoons pistachios halves divided
1 teaspoon wildflower honey
¼ teaspoon ground cinnamon
SAVORY FILL iNGREDIENTS
2 ounces soft goat cheese chevre, room temperature
3 tablespoons roasted red pepper
4 pitted Kalamata olives diced
1 tablespoon minced flat-leaf parsley
DIRECTIONS
1. Boil potatoes until tender but not falling apart.
2. Drain and let the potatoes rest until cool enough to handle.
3. Prepare savory filling. Stir together the goat cheese roasted red pepper and Kalamata olives.
4. Prepare sweet filling. Stir together the goat cheese, 2 tablespoons pistachios and wildflower honey.
5. Using a small, sharp knife, cut a small slice off of the bottom of each potato so that they sit flat.
6. Hollow out each potato to prepare them for filling.
7. Scoop about 1 teaspoon of the savory filling into half of the potatoes and garnish with parsley.
8. Scoop the sweet filling into the remaining half of the potatoes and garnish with the remaining pistachios.
