INGREDIENTS
12 oz. frozen corn
2 Tbsp. butter (melted)
1/2 jalapeno (seeded, diced)
3 Tbsp. lime infused honey
1/8 tsp. cayenne pepper
salt (to taste)
1 Tbsp. lime juice
1 Tbsp. cilantro leaves (chopped)
3 Tbsp. mexican queso fresco (crumbled)
DIRECTIONS
1. Heat cast iron skillet on medium heat.
2. Add the butter and jalapeno.
3. Add the corn and cook.
4. Add the lime infused honey, cayenne pepper, salt.
5. Stir to cook well until the corns are caramelized.
6. Add the lime juice, stir to mix well.
7. Top with the cilantro, cheese, pinch of cayenne pepper and serve immediately.
