Bursting with zesty citrus notes, balanced sweetness, and a delightful Mediterranean twist, this lemon honey Greek pasta salad is healthy and satisfying. Savor the harmonious marriage of tender orzo and fresh vegetables tossed in a lip-smacking lemon-honey dressing.


  • 3/4 cup orzo (cooked)

  • 1/4 tsp. grated lemon zest

  • 3 Tbsp. lemon juice

  • 1 Tbsp. olive oil

  • 1/2 tsp. salt

  • 1/2 tsp. minced garlic

  • 1/2 cup corn

  • 1/2 cup red bell pepper (chopped)

  • 1 zucchini (small, chopped)

  • 3 Tbsp. olive oil

  • Salt and pepper (to taste)

  • 1/2 cup mozzarella (cubed)

  • ½ cup black olives (sliced)

  • 1 cup cherry tomatoes (halved)

  • 1/3 cup fresh basil (cut into 1/2"in. wide strips)



1. Preheat the oven to 400F.

2. Chop corn, red bell pepper and zucchini into small bite sized pieces.

3. Toss corn, red bell pepper and zucchini with olive oil and place on baking sheet. Season with salt and pepper to your taste preference.

4. Bake vegetables 20-30 min., flipping every 8 min until crisp but tender.

5. Cook orzo pasta according to package directions. Drain, rinse and place in a large bowl.

6. Combine lemon zest, lemon juice, olive oil, salt, pepper, garlic, and lemon-infused honey. Whisk until well combined to make dressing.

7. Allow both baked vegetables and boiled pasta to cool completely before combining.

8. Toss cooled vegetables, cooled pasta, cubed mozzarella, cherry tomatoes, sliced olives and basil with the dressing.

9. Chill in the fridge until ready to enjoy.

Tip: this recipe gets more flavorful the longer the pasta is allowed to absorb the tangy sweet dressing.
